Characterizing Flavor Profiles of Regional Beef Jerky with GC-MS
February 27th 2025Gas chromatography-mass spectrometry (GC-MS), electronic tongue (E-tongue), electronic nose (E-nose), and sensory analysis were used to investigate the flavor profiles of beef jerky from four specific regions of China: Xinjiang, Tibet, Sichuan, and Inner Mongolia.
The Next Frontier for Mass Spectrometry: Maximizing Ion Utilization
January 20th 2025In this podcast, Daniel DeBord, CTO of MOBILion Systems, describes a new high resolution mass spectrometry approach that promises to increase speed and sensitivity in omics applications. MOBILion recently introduced the PAMAF mode of operation, which stands for parallel accumulation with mobility aligned fragmentation. It substantially increases the fraction of ions used for mass spectrometry analysis by replacing the functionality of the quadrupole with high resolution ion mobility. Listen to learn more about this exciting new development.
Unlocking the Flavor of Glutinous Rice Chicken with GC-MS
February 25th 2025Aroma compounds of glutinous rice chicken (GRC) were investigated and compared using headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS), electronic nose, and electronic tongue methods. Based on the results, the researchers believe that theoretical guidance can be established for the achievement of standardized, large-scale, and industrialized production of GRC products.
